A tasty ham from the magnificent autótoctone race of Portugal, considered one of  the rare quality pig breeds in the world.

Bísaro ham is one of the specialties produced in the north of Portugal. A breed of unique features based on a creation in extensive and a selected feed chestnut based, resulting in high quality meat with a perfectly balanced fat percentage, providing a marbled aspect of distinctive flavour and aroma to “Presunto”.
Bisaro’s ham is cured within a period from 18 to 30 months in a natural environment achieving a flavour and textures unlike any other kind of ham (presunto).

Here is the opportunity to taste a high quality and limited production of an outstanding Presunto/ham from Bísaro.

History

PRISCA is present throughout Portugal and occupies the first ranking of producers in the sector.

Located in Trancoso, land of hot, dry summers and cold, harsh winters, right in the heart of Beira Transmontana.

Its notoriety is based on meat products: Sausages and Hams.

Cured Ham, with or without bone, Chouriça, Salpicão, Morcela, Farinheira, Alheira and more recently gluten-free Alheira.

The Bísaro breed has a long history in Beira Transmontana, it was predominant in Portugal, north of the Tagus River, before the introduction of earlier growing breeds. Casa da Prisca's Bísaro Pigs are raised in Freches, a small village in the municipality of Trancoso. With optimal conditions for its development. The animals grow outdoors in a natural and sustainable environment.
