Maturation takes a minimum of 30 days and may extend up to a maximum of 90 days, passing to a different Terrincho variant designated as "old".
Both Terrincho and Transmontano Goat DOP cheeses are produced exclusively in Trás-os-Montes region – and only in some selected areas - where there are prime examples of the excellence of cheese-making and wonderful dairy products, not to be missed.
