Paio do Lombo - Pork Loin Smoked Sausage
The noble smoked sausage made with sirloin or tenderloin, prepared exclusively with the richest parts of pork and beautifully seasoned. This particular Paio from white pork has a few fat lines that give it a distinctive taste, being it however a low fat product.
Time and cured process are slow and gradual 6 to 8 months in traditional smokehouse allowing it to obtain a refined low fat sausage filled with a unique aroma and taste.
Recommended as an entry, thinly sliced, or as a main ingredient for a simple meal, pair it with a white or red or a distinct portuguese sparkling wine from Beiras or Dão region.
