Farinheira - Farinheira Smoked Sausage
This smoked sausage uses pork fat cut into very small pieces (crushed) wheat flour, paprika (colorau) seasoned with fine herbs, olive oil, white wine, garlic and pepper.
Outside has a golden yellow color, the interior comprises a smooth, homogeneous mass brown to golden.
Cured in a smokehouse oak firewood.
Has a pleasant mild flavour, slightly intense, it's tangy (but not hot), with a doughy texture and has a sweet finish on the palate.

Never consume it raw you should previously cooked. Farinheira goes very well mixed with scrambled eggs and served in bread or with toast as a starter. Try it directly (raw) on the oven until toasted where the fat mostly dries (previously make a few litle cuts) served with cooked cabbage. It's delicious.
