Serra da Estrela cheese is handmade and DOP certified, with a creamy and buttery taste to it. 
The exceptional quality of the milk the "Bordaleiras Serra da Estrela" and "Churra Mondegueira" breeds of sheep give to the production process that includes thistle provide it its unique taste and texture as well as making it into a truly vegetarian dairy product. 
It is matured for at least 30 days and is mostly produced between November and March. It is eaten by cutting out a circle on the upper part of its rind, removing it carefully to reveal the creamy, white cheese on the inside and then scooping it out with a knife or spoon and spreading it over toast or wrapped inside a slice of Portuguese quince paste (marmelada).

History
Originating from the “Serra da Estrela”, this DOP cheese is the oldest and the most famous of all Portugal´s cheeses as well as one of the Seven Wonders of the Portuguese Gastronomy contest, with its production being dated back to the 12th century, its worldwide fame started in the late 15th and the early 16th centuries, with the Portuguese discoveries, soon followed by poets and writers extolling its undoubted virtues.
It began to be produced as the result of a glut of sheep’s milk in the region, so local farmer took advantage of its abundance and, coupled with the very favorable climate of the region and their expertise in the production of butter, this true delicacy was born.
Its unique taste derives not just from the production methods employed but also from the particular flavour of the milk from 2 local breeds of sheep: the autochthonous breed “Bordaleira” and the “Churra Mondegueira”, that are only allowed to graze in specific pasture lands so as to maintain its consistency over the years.
The pastures are carefully chosen by the shepherds to give the best milk and a final product of excellence. The secret i's in what the sheep eat that gives the quality of the final product, say the cheese producers.
